- Olive Oil1 Tablespoons
- Mayonnaise1/4 Cups
- Garlic2 Cloves
- French sandwich rolls2
- Feta cheese1/2 Cupscrumbled
- Basil leaves1/4 Cupschopped; fresh
Preheat the broiler of the oven.
Cut the eggplant into slices and use olive oil to brush the slices; also cut the tomato into slices.
Place all the eggplant slices on a baking sheet.
Place the pan in the broiler in such a way that it’s about 6 inches away from the source of heat.
Cook the eggplant slices for about 10 minutes so that they become well toasted.
Cut the French rolls lengthwise and place them in a toaster to toast them.
Place mayonnaise in a small bowl and add minced garlic in it. Mix them well.
Spread this mayo-garlic mixture over the toasted French bread.
Now add eggplant slices in the bread rolls.
Then add basil leaves, tomato, and feta cheese in the rolls and roll them tightly.
Serve these delicious eggplant sandwiches with mustard sauce.
Eggplant sandwiches are quite popular all over the world especially in Asia. I was able to eat these sandwiches when I was on a trip to Thailand. Feta cheese, mayo, garlic, and eggplant are added in the French rolls to give a perfect treat to the food lovers. Get to prepare these delicious sandwiches in just about half an hour or so.
