Preheat the oven to 175 C/ 350 F.
Generously grease 8 muffin cups with butter. You can also line them with paper liners instead.
Break open the eggs in a large bowl and beat them well.
Add water, bell pepper, salt and pepper, and onion in the bowl and mix well.
Now transfer the egg mixture over the greased/line muffin cups.
Place all the muffin cups in the preheated oven and bake for about 20 minutes so that the muffins are quite set in the center.
