- Salmon16 Ounces
- Mayonnaise1 Cups
- Parsley1 Tablespoonsfresh
1) Place the eggs in a saucepan and add enough cold water in it; make sure that the eggs are well immersed.
2) Let the water come to a boil; remove the pan from the heat.
3) Cover the pan and let the eggs stay in the hot water for about 12 minutes.
4) Remove the eggs from the water and let them cool down; then peel off the eggs.
5) Peel off the potatoes and cut them into cubes.
6) Place the potato cubes in a pan and fill the pan with enough water; make sure that the potato cubes are well immersed in the water.
7) Let the water come to a boil and cook the potatoes for about 15 minutes so that the potatoes are quite soft.
8) Remove the pan from heat and transfer the potatoes to a bowl. Set the bowl aside.
9) Pour oil in a medium sized skillet and bring the skillet over heat. Let the oil get hot.
10) Chop a large onion into fine pieces and add it in the skillet; cook the onion for about 10 minutes so that they are light brown in color.
11) Flake the salmon pieces and spread them over a baking dish (glass).
12) Now spread sautéed onions over the salmon.
13) Generously spread some mayonnaise over the sautéed onions.
14) Then add boiled potato cubes over the mayonnaise and then add mayonnaise once again.
15) At last, add eggs over the mayonnaise layer; then again add mayonnaise and garnish the salad with chopped parsley.
16) Do reserve some egg slices and then use them to garnish the salad.
17) Place the bowl in a refrigerator for about an hour.
18) Serve potato and salmon salad as a healthy dinner.

I often take it along a picnic and serve it as a great meal. What I love about this salad recipe is that you don’t need to visit the market to make this salad, as all the required ingredients are easy available in the refrigerator. Takes about 2 hours to get ready – but the taste is so amazing that you forget about the time invested.
